Job Requirements
- Degree in culinary arts
- Four years of management experience in a culinary role
- Food safety or manager certification
- Strong leadership and team management skills
- Knowledge of menu development and food presentation
- Ability to work under pressure and solve problems quickly
- Excellent communication and organizational skills
- Ability to maintain health and safety standards
- Experience in inventory and budget management
- Availability to work flexible hours including weekends and holidays
Job Qualifications
- Degree in Culinary Arts
- Four years management experience as a Restaurant Chef, Executive Sous Chef, or Executive Chef
- Food Safety/Manager Certification
- Expertise in food product, presentation, quality, and preparation
- Experience with menu concept and design
- Ability to read and interpret safety rules, operating and maintenance instructions, and procedure manuals
- Ability to write routine reports, purchase orders, menus and correspondence
- Effective communication skills with customers and employees
- Basic arithmetic skills including addition, subtraction, multiplication, and division
- Ability to compute rate, ratio, and percent
- Problem-solving skills in situations with limited standardization
- Ability to interpret instructions in written, oral, diagram, or schedule form
Job Duties
- Operate as the right-hand chef to the Executive Chef in culinary leadership
- Work closely with culinary staff and sous chefs in day-to-day kitchen operations
- Standardize recipes with the Executive Chef
- Maintain food quality and ensure guest satisfaction
- Set standards and maintain food presentation quality
- Ensure standard recipes are followed
- Source new products and supplies to develop menus
- Constantly improve food production
- Resolve kitchen problems promptly
- Recruit and monitor staff performance
- Motivate staff and maintain discipline
- Manage hiring, training, scheduling, payroll, performance evaluation, and terminations
- Oversee inventory, purchasing, and receiving of FOH and BOH products
- Enforce health and hygiene standards
- Cooperate with front of house management on service issues
- Expedite during service
- Build apprenticeship and staff development programs
- Participate in service education including daily line-ups, menu meetings, and server training
- Train kitchen staff to produce meals promptly
- Execute all tickets in twenty minutes or less
- Meet financial targets while achieving food quality and service objectives
- Identify and address issues impacting financial goals
- Maintain food and labor costs within budget
- Ensure kitchen profitability
- Maintain high level of kitchen cleanliness
- Supervise daily cleaning assignments
- Assist General Manager in supervising kitchen employees
- Work to instill company culture and build morale
- Carry out supervisory responsibilities in alignment with policies and laws
- Interview, hire, train, assign work, appraise, reward, discipline employees
- Address complaints and resolve problems
- Use Employee Handbook for consistent communication of rules
