Job Requirements

  • Formal training through cooking school, professional culinary institute, or 2- or 4-year college degree program in hospitality or culinary arts
  • Five years demonstrated experience as a working chef with strong emphasis in high volume food production
  • Certified Working Chef or higher or ability for certification within six months of hire
  • Current county health department food handler's card
  • Current ServSafe certification
  • Ability to communicate effectively both verbally and in writing
  • Skilled in time management, organizing workload and workflow production staff, assigning work, and controlling the end product
  • Ability to control costs through planning and monitoring activities
  • Ability to provide outstanding guest service
  • Knowledge of information management and personal computer applications
  • Knowledge of HACCP food safety and sanitation program
  • Ability to perform the essential functions of the position with or without accommodation

Job Duties

  • Assist in menu planning and preparation for OHSU Hospital Cafe
  • Coordinate daily food preparation and presentation for the cafe
  • Assist in planning and maintaining the published 4-week menu rotation
  • Assist in planning, preparing, and coordinating high-quality patient meals adhering to dietary restrictions
  • Schedule staff and assign duties
  • Reconcile and adjust timekeeping per union contract
  • Enforce HACCP and sanitation program for all production staff
  • Ensure infection prevention and control policies are followed
  • Maintain cleaning and sanitation schedules
  • Work with purchasing agent to ensure sufficient supplies
  • Create, modify, and scale recipes using Chef - Tec and CYBORD software
  • Conduct visual inspection of food storage and rotation
  • Attend weekly production meetings to review menu and production activities
  • Perform other duties as assigned
