Job Requirements

  • Culinary diploma from a recognized institution or higher
  • minimum 10 years culinary experience including 2 years in senior management
  • strong administration skills
  • ability to work standing for prolonged periods
  • ability to walk up and down stairs multiple times per day
  • ability to lift, push and pull at least 30 lbs
  • capacity to work indoors and outdoors under varying weather conditions
  • excellent communication and computer skills

Job Duties

  • Interact with members to obtain feedback on product quality and service levels
  • respond to and handle member's problems and complaints
  • assist in succession planning recommendations to the Executive Chef
  • ensure recipes and product yields are accurately costed and reviewed regularly
  • ensure food items are prepared according to standard recipe cards with proper portion control and waste minimization
  • maintain adequate food stock levels relevant to club occupancy and function forecasts
  • oversee associate meals and dining services to maintain consistent quality
  • ensure correct and safe use of food preparation equipment while maintaining cleanliness
  • adhere to departmental operational budgets
  • enforce compliance with company and club policies
  • ensure all culinary products meet first-class quality standards and are delivered on time
  • plan creative menus and oversee food preparation across all outlets including banquets
  • collaborate with Food and Beverage Manager in marketing planning for outlets
  • manage banquet set-ups according to club standards
  • stay updated on new market items and trending products
  • initiate and follow up on maintenance reports and work orders
  • manage and take personal interest in culinary associates
  • verify use of highest quality products in food preparation
  • supervise all kitchen stewards and their activities
  • administer weekly work schedules and leave planners
  • coach and counsel employees following club policy
  • act as manager on duty as scheduled
  • recruit and select culinary team members able to work within decentralized management philosophy
