Job Requirements

  • Associate's degree or equivalent experience

Job Duties

  • Promotes culinary department goals by selecting, motivating, and training capable team members
  • leads activities of assigned culinary team members by providing guidance toward achieving department objectives
  • supervises, hires, trains, disciplines and evaluates performance of staff
  • provides training and in-services on cooking techniques, safety and sanitation regulations, operating policies and procedures
  • ensures timely completion of performance appraisals
  • prioritizes, schedules, assigns and monitors work to optimize food preparation
  • develops, selects and standardizes production recipes
  • establishes presentation techniques and quality standards
  • plans menus in collaboration with dietary staff, department standards, costs and recipe information
  • generates and posts daily food production sheets based on estimated food consumption
  • prepares all food items appropriate for each meal period
  • adjusts staff workflow to ensure timely meal output
  • removes food items from storage according to meal requirements
  • prepares food items following recipes and menus
  • ensures safe use of kitchen equipment and utensils
  • places food in cooking pans and cooks according to menu requests
  • portions food according to portion control guidelines
  • serves food according to menu requests
  • manages leftover food by wrapping, dating, labeling and storing
  • discards food not meeting safety guidelines
  • complies with sanitation, safety, and fire regulations
  • cleans work area, equipment and utensils
  • informs Executive Chef of inventory issues
  • reports malfunctioning equipment
  • resolves customer questions and complaints
  • escalates issues as required
  • performs related duties as needed
