Job Requirements

  • High school diploma or equivalent
  • Formal culinary training or degree in hospitality or culinary arts
  • Minimum five years experience as a working chef in high volume food production
  • Certified Working Chef or willingness to obtain certification within six months
  • Current food handler's card
  • ServSafe certification
  • Ability to work occasional evenings
  • Ability to perform essential functions with or without accommodation

Job Qualifications

  • Formal training through cooking school, professional culinary institute, or 2- or 4-year college degree program in hospitality or culinary arts
  • Five years demonstrated experience as a working chef with strong emphasis in high volume food production
  • Certified Working Chef or higher (or ability to obtain certification within six months of hire)
  • Current county health department food handler's card
  • Current ServSafe certification
  • Ability to communicate effectively both verbally and in writing with patients, visitors, employees, and all levels of management
  • Skilled in time management, organizing workload, assigning work, and controlling final product quality
  • Ability to control costs through planning and monitoring activities
  • Ability to provide outstanding guest service
  • Knowledge and personal skill in computer applications
  • Knowledge of Hazard Analysis and Critical Control Point food safety and sanitation program
  • Ability to perform essential job functions with or without accommodation

Job Duties

  • Assist in menu planning and preparation for the OHSU Hospital Cafe
  • Coordinate daily food preparation and presentation for the cafe
  • Assist in planning and maintaining the published 4-week menu rotation
  • Assist in planning, preparation, and coordination of high-quality, nutritious patient meals conforming to dietary restrictions
  • Schedule staff and assign duties
  • Reconcile and make adjustments in timekeeping system according to union contract
  • Enforce Hazard Analysis and Critical Control Point food safety and sanitation program for production staff
  • Ensure all infection prevention and control policies are followed
  • Maintain cleaning and sanitation schedules to keep facility sanitary
  • Work with purchasing agent to ensure adequate supplies and specialty food products
  • Create, modify and scale recipes using Chef-Tec and CYBORD software
  • Conduct visual inspections of food storage to ensure proper utilization and rotation
  • Attend weekly production meetings to review menu and production activities
  • Perform other duties as assigned
