Job Requirements
- BS degree in culinary arts or similar qualifications
- 5+ years experience running a commissary or large restaurant/banquet/catering
- Familiarity with USDA/FDA guidelines
- Strong understanding of the Paleo diet, Ketogenic diet, low/slow carb and Mind diet
- Skilled at planning, organizing, prioritizing, and executing projects and activities
- Lean six sigma experience a plus
- Passionate about helping people achieve their goals and improve themselves

Job Duties
- Oversee product quality and food safety in a mass production kitchen
- Ensure execution of new recipes and training of kitchen staff
- Develop and implement process controls
- Validate consistent taste, appearance, and performance of meals
- Train and lead team members in production stages
- Implement gold standards of food quality and safety
- Leverage knowledge of HACCP, FSMA, SQF, and USDA regulations
- Continuously improve product quality and processes
- Address product quality issues and customer complaints
- Supervise food production personnel and assist as needed
- Control costs to achieve maximum profitability
- Ensure proper staffing for productivity and quality
- Prepare cook schedules and manage payroll
- Supervise employee training, sanitation, safety, and menu planning
- Develop professional development opportunities for staff
- Maintain kitchen security and inventory
- Assume charge of kitchen in Executive Chef absence
- Oversee all aspects of food preparation
- Work flexibly in assigned stations
- Maintain food quality standards
- Submit maintenance and repair requests
- Coordinate production timing and adjustments
- Inspect food presentation before production time
