Job Requirements
- One-year certificate from college or technical school and four years related experience and/or training or equivalent combination of education and experience
- current certification in food handling and safety sanitation (Serv-Safe or similar) is required
- ability to work flexible hours, including nights, weekends, and holidays
- ability to lift and/or move up to 25 pounds regularly
- excellent organizational and planning skills
- strong customer service orientation
- excellent communication and interpersonal skills
- knowledge of spreadsheet and word processing software
- ability to work with limited supervision
- ability to interact with all levels of staff including management

Job Duties
- Work with Executive chef on special menus
- conduct on-site menu tasting
- estimate food consumption
- oversee all purchasing and supplies needed for kitchen operations
- ensure FIFO is incorporated in all operations
- review menus and analyze recipes
- determine food, labor, and overhead costs
- assign prices to menu items
- supervise cooking and kitchen personnel
- coordinate staff assignments to ensure economical and timely food production
- familiarize newly hired cooks with kitchen practices and oversee training
- establish and enforce nutrition and sanitation standards
- participate in COD lines and oversee contracted banquets
- enforce company policies and applicable laws
- interview, hire, and train employees
- plan, assign, and direct work
- appraise performance
- reward and discipline employees
- address complaints and resolve problems
