Job Requirements

  • Knowledge of local health rules, regulations and food handling
  • knowledge of P&L, food and labor costs and menu costing
  • proven ability to lead and train a diverse workforce effectively
  • minimum of 5-10 years culinary management experience preferably in upscale culinary environments
  • experience with opening new culinary operations is essential

Job Duties

  • Monitor, analyze and control all labor and food costs
  • prepare reports, charts and schedules to ensure budgets are met with primary oversight of banquet and catering operations
  • supervise kitchen staff including training, counseling, disciplining, terminating and conducting performance evaluations
  • supervise all cooking operations including methods, portioning, and garnishing
  • requisition food and equipment with precise specifications
  • ensure attractive presentation and quality of all food and dishes
  • develop and maintain effective relationships with internal and external customers and promote a customer service orientation
  • set high kitchen standards through leadership by example
  • maintain excellent knowledge of current culinary trends
  • remain self-driven, innovative and committed to becoming an industry leader
