Job Requirements
- One-year certificate from college or technical school or equivalent combination of education and experience
- Four years related experience and/or training
- Current certification in food handling and safety sanitation
- Knowledge of spreadsheet and word processing software
- Excellent organizational and planning skills
- Strong customer service orientation
- Excellent communication and interpersonal skills
- Ability to work flexible hours including nights, weekends, and holidays
- Ability to interact with all levels of staff including management

Job Duties
- Work with Executive chef on special menus
- Conduct on-site menu tasting
- Estimate food consumption and oversee purchasing and supplies needed for kitchen operation
- Ensure FIFO is incorporated in all aspects of kitchen operation
- Review menus, analyze recipes, determine food, labor, and overhead costs, and assign menu prices
- Supervise cooking and kitchen personnel and coordinate assignments for efficient food production
- Familiarize and train newly hired cooks on kitchen practices
- Establish and enforce nutrition and sanitation standards for food and beverage
- Manage daily kitchen operations for 1-50 employees including contracting banquets
- Interview, hire, and train kitchen staff
- Plan, assign, and direct work
- Appraise performance and address employee issues
- Enforce organizational policies and applicable laws
