Job Requirements

  • One-year certificate from college or technical school or equivalent combination of education and experience
  • Four years related experience and/or training
  • Current certification in food handling and safety sanitation
  • Knowledge of spreadsheet and word processing software
  • Excellent organizational and planning skills
  • Strong customer service orientation
  • Excellent communication and interpersonal skills
  • Ability to work flexible hours including nights, weekends, and holidays
  • Ability to interact with all levels of staff including management

Job Duties

  • Work with Executive chef on special menus
  • Conduct on-site menu tasting
  • Estimate food consumption and oversee purchasing and supplies needed for kitchen operation
  • Ensure FIFO is incorporated in all aspects of kitchen operation
  • Review menus, analyze recipes, determine food, labor, and overhead costs, and assign menu prices
  • Supervise cooking and kitchen personnel and coordinate assignments for efficient food production
  • Familiarize and train newly hired cooks on kitchen practices
  • Establish and enforce nutrition and sanitation standards for food and beverage
  • Manage daily kitchen operations for 1-50 employees including contracting banquets
  • Interview, hire, and train kitchen staff
  • Plan, assign, and direct work
  • Appraise performance and address employee issues
  • Enforce organizational policies and applicable laws
