Job Requirements

  • One-year certificate from college or technical school and four years related experience and/or training or equivalent combination of education and experience
  • Current certification in food handling and safety sanitation (Serv-Safe or similar)
  • Ability to work flexible hours including nights, weekends, and holidays
  • Ability to interact with all levels of staff including management
  • Excellent organizational and planning skills
  • Strong customer service orientation
  • Excellent communication and interpersonal skills
  • Knowledge of spreadsheet software and word processing software

Job Duties

  • Work with Executive chef on special menus
  • Conduct on-site menu tasting
  • Estimate food consumption and oversee all purchasing and supplies needed for kitchen operation
  • Ensure FIFO is incorporated into all facets of the operation
  • Review menus, analyze recipes, determine food, labor, and overhead costs, and assign prices to menu items
  • Supervise cooking and other kitchen personnel and coordinate their assignments to ensure economical and timely food production
  • Familiarize newly hired cooks with kitchen practices and oversee training
  • Establish and enforce nutrition and sanitation standards for food and beverage
  • Interview, hire, and train employees
  • Plan, assign, and direct work
  • Appraise performance
  • Reward and discipline employees
  • Address complaints and resolve problems
