Job Requirements
- Able to train and manage a large staff
- Able to stand for 10-14 hour shifts
- Physically able to perform job demands including sitting, bending, lifting, reaching, pulling/pushing, kneeling, squatting, and grasping
- Able to obtain and maintain necessary licenses and/or certifications required by local gaming regulations
Job Qualifications
- Experience in high volume food sales
- Leadership, team building and implementation skills
- Minimum 4 years of management experience
- Minimum 7 years of foodservice experience
- Superior technical and natural cooking abilities
- College degree preferred
- Minimum 5 years experience in multi-unit food and beverage or casino/hotel operations
- Knowledge of standards in food and beverage service, storeroom procedures and cooking methods
- Bilingual skills preferred
- Proficiency with opening and closing procedures, inventory production, food knowledge and POS systems
Job Duties
- Create and maintain an upbeat, productive, and educational kitchen environment
- Project a positive attitude and display respect for all employees and food
- Provide ongoing training and continuous improvement of product and workplace safety and sanitation
- Offer feedback and develop the Chef team
- Participate actively in Food & Beverage management meetings
- Work with management and front-line teams to increase guest counts and build a loyal guest base
- Manage staffing levels, recruit and hire quality employees including leadership and line positions
- Establish and oversee employee training systems
- Complete performance reviews of kitchen staff
- Maintain accurate employee records and proper documentation
- Assess and develop culinary team members
- Coach and mentor staff for career development
- Manage food and labor costs to maximize sales and profits
- Participate in P&L review meetings and analyze monthly financial reports
- Develop kitchen action plans and implement cost reduction strategies
- Monitor labor reports and minimize overtime
- Conduct weekly food cost assessments
- Produce monthly physical food inventory and handle other assigned duties
