Job Requirements

  • Have a minimum of 5 years of experience in a fine dining restaurant environment
  • Have a minimum of 2 years of experience in a high-volume preparation environment
  • Must be flexible to work extended hours due to business requirements including late nights, weekends and holidays
  • Must be able to work in a team environment
  • Ability to lead and manage a pastry team
  • Strong attention to detail and organizational skills
  • Capable of maintaining high standards of cleanliness and safety

Job Qualifications

  • Degree in hotel or restaurant management preferred
  • Minimum of 5 years experience in a fine dining restaurant environment
  • Minimum of 2 years experience in a high-volume preparation environment
  • Excellent leadership and team management skills
  • Strong knowledge of pastry and baking techniques
  • Ability to develop and innovate dessert menus
  • Familiarity with health, safety, and sanitary regulations
  • Effective communication and interpersonal skills
  • Proven ability to work extended hours including nights, weekends, and holidays

Job Duties

  • Assist with the development of standardized recipes for all menu items
  • Ensure that recipes are accurate and updated as needed
  • Ensure all food products meet established specifications and standards
  • Prepare proper levels of bakery and pastry items based on forecasted needs
  • Assign tasks effectively to maximize labor efficiency and meet daily production needs
  • Maintain cleanliness, organization, and setup of the Pastry Department and bakery areas
  • Stay updated on industry trends in pastry and baking
  • Bake fresh pastries, desserts, and bread for all outlets
  • Act as a manager, team leader, and motivator for the Pastry Department
  • Recommend improvements to production, equipment, scheduling, and safety
  • Maintain a sanitary, safe, and organized environment for employees and guests
  • Review and adjust menu items as necessary using leftovers where possible
  • Ensure kitchen equipment is clean, in working order, and report repair needs
  • Create recipe cards and train Bakers accordingly
  • Assist in the annual budget process and make recommendations for the Bakery Department
  • Enforce health, safety, and sanitary rules according to regulations
  • Attend meetings and training sessions as required
  • Perform other duties as assigned
