Job Requirements

  • Degree in hotel or restaurant management preferred
  • Have a minimum of 5 years of experience in a fine dining restaurant environment
  • Have a minimum of 2 years of experience in a high-volume preparation environment
  • Must be flexible to work extended hours due to business requirements including late nights, weekends and holidays
  • Must be able to work in a team environment

Job Duties

  • Assist with the development of standardized recipes for all menu items
  • Ensure that all food products prepared meet established specifications and standards
  • Ensure proper levels of bakery and pastry items are prepared based on forecasted needs and their prompt delivery to designated outlets
  • Assign tasks effectively for efficient use of labor ensuring maximum results and timely production
  • Responsible for complete set up, cleanliness and organization of the pastry department and bakery areas
  • Maintain knowledge of industry trends in pastry and baking
  • Bake fresh pastries, desserts and bread for all outlets
  • Act as a manager, team leader and motivator for the pastry department
  • Recommend measures to improve production, service methods, equipment performance, scheduling, quality control, and suggest changes to increase efficiency and safety
  • Ensure sanitary, neat, clean, organized, safe and comfortable environment for employees and guests
  • Review menu items and make changes as necessary, utilize leftovers when possible
  • Ensure kitchen equipment is clean, in working order, and report repairs
  • Create recipe cards and train bakers using these cards
  • Assist Executive Chef with annual budget process and department recommendations
  • Facilitate adherence to health, safety, sanitary rules, regulations and standards
  • Attend meetings and training as required
  • Perform other duties as assigned
