Job Requirements

  • Degree in hotel/restaurant management preferred
  • minimum of 5 years experience in a fine dining restaurant environment
  • minimum of 2 years experience in a high-volume preparation environment
  • flexible to work extended hours including late nights, weekends and holidays
  • able to work in a team environment

Job Duties

  • Assist with the development of standardized recipes for all menu items
  • ensure that recipes are accurate and updated as needed
  • ensure all food products meet established specifications and standards
  • prepare proper levels of bakery and pastry items based on forecasted needs
  • assign tasks effectively for efficient use of allocated labor
  • maintain cleanliness and organization of the Pastry Department and bakery areas
  • keep knowledge of industry trends in pastry and baking
  • bake fresh pastries, desserts and bread for all outlets
  • act as manager and motivator for the Pastry Department
  • recommend improvements for production, equipment, scheduling, quality control, and working conditions
  • maintain sanitary, safe, and organized environment
  • review and update menu items
  • ensure kitchen equipment cleanliness and working order
  • create recipe cards and train bakers
  • assist in budget process and make department recommendations
  • enforce health, safety, and sanitary regulations
  • attend meetings and training sessions
  • perform other duties as assigned
