Job Requirements

  • Bachelor's degree in culinary arts or related field preferred
  • Minimum 5 years of patisserie management experience
  • 3-4 years of previous culinary leadership experience
  • Strong leadership and communication skills
  • Ability to work weekends and holidays
  • Capable of producing consistent quality products in a timely manner
  • Ability to train, coach, and mentor associates
  • Proficient computer skills
  • Flexibility in schedule and location
  • Excellent customer service orientation
  • Strong organizational and problem-solving skills

Job Qualifications

  • Proven track record in high volume culinary operations
  • Exceptional patisserie knowledge and skills
  • Extensive experience in pastry kitchen operations
  • Strong bakery, patisserie, bread mixing, and gingerbread presentation skills
  • At least 3-4 years of culinary leadership experience such as Chef de Cuisine, Executive Sous Chef, or Executive Chef
  • Strong leadership, communication, and organizational skills
  • Experience in training, financial management, and customer service
  • Proficiency in general computer knowledge
  • Ability to deliver exceptional customer service
  • Strong training and communication skills
  • Minimum 5 years of patisserie management experience
  • International patisserie knowledge preferred
  • Geographic and schedule flexibility preferred

Job Duties

  • Assist in preparing and updating the Pastry Departmental Operations Manual
  • Conduct regular communications meetings and departmental briefings
  • Ensure pastry and bakery associates deliver quality and exceptional guest service
  • Handle guest and internal customer complaints courteously and efficiently
  • Execute daily Forbes Training and role model standards
  • Maximize associate productivity through multi-skilling and flexible scheduling
  • Assist in managing costs based on key performance indicators
  • Ensure adherence to all relevant hotel, company, and local policies and regulations
  • Assist in inventory management and maintenance of equipment and assets
  • Oversee production management of all pastry and bakery goods
  • Ensure implementation of company brand standards
  • Respond to Consumer Audit results and implement changes
  • Encourage creativity and innovation among associates
  • Collaborate closely with other management for overall hotel success
  • Promote teamwork and flexibility between departments
  • Keep associates informed about seasonal and new product availability
  • Taste and monitor pastry and bakery products, providing feedback
  • Collaborate with Director of Purchasing to procure the best products
  • Work with Stewarding Manager to maintain hygiene standards
  • Supervise the care and proper use of operating equipment
  • Assist in recruitment and selection of pastry and bakery associates
  • Enforce punctuality, appearance, and grooming standards
  • Develop skills of sous chefs and team leaders through training and mentoring
  • Conduct annual performance development discussions
  • Plan and implement associate training in coordination with Training Manager
  • Provide ongoing feedback to develop Departmental Trainers
  • Prepare and post weekly work schedules
  • Ensure associates understand and adhere to company rules
  • Enforce compliance with fire, hazard safety, and security policies
  • Provide feedback on Associate Survey results and implement changes
