Job Requirements

  • Must have at least a high school diploma or equivalent
  • minimum 5 years of patisserie management experience
  • 3-4 years of culinary leadership experience in a related role
  • strong leadership and communication skills
  • ability to work weekends and holidays
  • ability to train and mentor associates
  • effective problem-solving and decision-making skills
  • proficiency in computer applications
  • flexibility to adapt to changing schedules and peak periods
  • knowledge of food safety, hygiene, and occupational health standards

  • strong bakery, patisserie and bread mixing skills

  • 3-4 years of previous culinary leadership experience such as Chef de Cuisine, Executive Sous Chef or Executive Chef
  • strong leadership, communication, organization and relationship skills
  • experience with training, basic financial management and customer service
  • outstanding general computer knowledge
  • true desire to exceed guest expectations in a fast-paced customer service environment
  • capable of producing a consistent product in a timely manner
  • strong training and communication skills
  • at least 5 years of patisserie management experience
  • international patisserie knowledge desired
  • geographic and schedule flexibility preferred
  • strong mental presence to lead team through peak business periods

Job Duties

  • Assist in overseeing the preparation and update of the Pastry Departmental Operations Manual
  • conduct regular communications meetings and ensure that departmental briefings and meetings are effective and conducted as necessary
  • ensure all pastry and bakery associates deliver the quality promise and provide exceptional guest service at all times
  • handle all guest and internal customer complaints and inquiries in a courteous and efficient manner
  • execute daily Forbes Training and role model the message
  • maximize associate productivity through multi-skilling, multi-tasking and flexible scheduling
  • assist in proactively managing costs based on key performance indicators
  • ensure adherence to hotel, company and local rules, policies and regulations
  • assist in inventory management and maintenance of hotel operating equipment
  • oversee the production management of all pastry and bakery goods for the hotel’s food and beverage operation
  • ensure all company minimum brand standards have been implemented
  • respond to Consumer Audit results and implement relevant changes
  • encourage creativity and innovation among associates
  • work closely with other management personnel in a supportive and flexible manner
  • ensure pastry and bakery associates work in a supportive and flexible manner with other departments
  • keep associates up to date with seasonal and new product availability
  • taste and monitor pastry and baked products served, providing feedback
  • assist Director of Purchasing in procurement of best product for best price
  • work closely with Stewarding Manager to maintain hygiene standards
  • supervise associates to ensure care and proper use of operating equipment
  • assist in recruitment and selection of pastry and bakery associates
  • oversee punctuality and appearance, ensuring correct uniform and grooming standards
  • develop skills and effectiveness of Sous Chefs and Team Leaders through training, coaching and mentoring
  • conduct annual Performance Development Discussions
  • plan and implement effective training in coordination with Training Manager and Departmental Trainers
  • assist in development of Departmental Trainers
  • prepare and post weekly work schedules reflecting business needs
  • ensure associates understand and adhere to rules and regulations relating to fire, hazard safety and security
  • provide feedback on Associate Survey results and ensure relevant changes
