Job Requirements
- At least 6 years of relevant experience
- Proven leadership in pastry or culinary management
- Strong knowledge of Japanese cuisine and pastry techniques
- Ability to manage costs, menu development and food safety
- Exceptional communication and interpersonal skills
- Ability to work flexible hours including weekends and holidays
- Advanced computer literacy
- Capable of standing for long periods
- Physical ability to lift heavy items and perform physical tasks consistently
- Experience working in a high-volume fine dining or luxury restaurant environment
- Knowledge of health and safety regulations
- Ability to lead and develop a team effectively
Job Qualifications
- Excellent people and communication skills
- Calm under pressure with ability to solve problems, prioritize work, and meet deadlines
- Able to work flexible schedules
- Advanced reading and mathematical skills
- Advanced computer skills in Microsoft Word, Excel, PowerPoint
- Ability to work in high-pressure environments
- Extensive knowledge of Japanese food, culture, terminology and sushi techniques
- Advanced knife skills
- Excellent customer service and communication skills
- Minimum 6 years experience in sushi bar and kitchen in high-volume internationally acclaimed restaurants
- Prior experience at Nobu restaurant or hotel desirable
- Ability to work from standing position for extended periods
- Ability to lift 40-50 pounds
- Ability to push or pull at least 100 pounds
- Ability to perform reaching, stooping, and crouching repeatedly
- Dexterity in hands and fingers
- Good visual abilities including closeness and depth perception
- Physical tolerance for hot, humid environments
- Physical tolerance for minimum 40-hour work week with possibility of more
Job Duties
- Oversee and monitor pastry and bakery standards within each outlet and banquets including methods of preparation, portion control and garnishing
- Responsible for day-to-day pastry operations including controlling quality and quantity of produced items, menu planning, hygiene standards, communication and training of staff
- Support, lead and motivate all pastry sous chefs and cooks
- Cross utilize teams to cover all needs of the operation
- Follow all applicable safety procedures and ensure culinary department cleanliness and compliance with regulations
- Ensure all food is prepared, stored, and served according to Nobu and health department regulations
- Interview, hire, fire and discipline culinary staff including training, coaching and conducting performance reviews
