Job Requirements
- ability to work from a standing position for extended periods
- ability to perform reaching, stooping and/or crouching motions repeatedly
- dexterity in hands and fingers for food preparation tools
- visual abilities including closeness and depth perception
- sense of smell and taste for quality control
- closed toe, non-canvas and non-skid shoes required
- minimum of five years high-volume fine dining cooking experience
- minimum of three years experience as executive chef
- basic literacy and computer skills
- ability to train and motivate staff
- strong organizational skills
- excellent communication skills
- ability to maintain professional grooming

- basic reading, writing, mathematical and computer skills
- at least five years of high-volume cooking experience in fine dining
- at least three years as an executive chef in a hotel or fine dining restaurant
- strong interpersonal, verbal and written communication skills
- experienced leader, trainer, and motivator of staff
- even-tempered with consistency and fairness
- organized and able to meet deadlines
- good judge of people and situations
- ability to handle many details and high volume events
- neat, well-groomed and professional
- exceptional guest and customer service skills
Job Duties
- review and approve recipe files and discuss improvements with culinary staff
- use high quality ingredients prepared creatively and cost-effectively
- approve food orders from central commissary for special items
- inspect finished products for quality before leaving kitchen
- oversee kitchen cleanliness, safety, and equipment maintenance
- troubleshoot kitchen issues and manage waste disposal
- create menus and order for special events, price menu and catering items according to cost guidelines
- develop and approve seasonal specials
- conduct product taste panels
- participate in culinary events and competitions
- control food costs by establishing purchasing specifications and waste procedures
- review daily food cost reports
- ensure invoices are coded and prices updated weekly
- manage kitchen payroll with respect to budget
- interview, hire, and manage kitchen staff
- train and motivate culinary team to maintain food quality standards
- provide leadership and maintain a positive work environment
- delegate responsibilities to develop staff
- cooperate with management team and complete assigned projects
- maintain professional grooming and uniform standards
