Job Requirements

  • More than two years of post high school education but less than a four-year college degree
  • Minimum five to ten years of experience in kitchen management
  • Prior experience managing a unionized kitchen preferred
  • Advanced knowledge of food profession principles and practices
  • Strong oral and written communication skills
  • Moderate hearing for safety communication
  • Excellent vision for safety reasons
  • Moderate speech communication skills
  • Excellent comprehension and literacy for budget analysis
  • Ability to perform physical tasks such as lifting 30-35 pounds multiple times per shift, carrying various items, kneeling for inspections, and standing continuously for up to 50% of the shift
  • Capability to work in varying temperature conditions from -10 degrees to over 100 degrees inside the kitchen environment

Job Qualifications

Job Duties

  • Plan and manage the unionized kitchen staff in procurement, production, preparation and presentation of all food in a safe, sanitary work environment
  • Recommend menu and procedural changes
  • Recommend the budget and manage food and labor costs within approved budget constraints
  • Perform all essential functions adhering to SOPs and food programs to ensure consistent, quality products
  • Manage associates and managers to attract, retain and motivate employees while providing a safe environment
  • Hire, train, develop, empower, coach and counsel, conduct performance and salary reviews, resolve problems, provide open communication and discipline and terminate as appropriate
  • Monitor and control maintenance and sanitation of kitchen, equipment and related areas to meet or exceed standards and regulations
  • Develop, recommend, implement and manage the department’s budget and analyze, forecast, monitor and control labor and food costs
  • Develop and implement menus and back-up to improve revenues and profit margins while maintaining quality
  • Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
