Job Requirements
- More than two years of post high school education but less than a four-year degree
- minimum five to ten years of related experience
- prior experience managing a unionized kitchen strongly preferred
- requires oral and written communication skills
- must have moderate hearing and excellent vision for safety
- must have moderate speech communication skills
- must have excellent comprehension and literacy to fulfill budget
- ability to lift objects weighing 30-35 pounds multiple times per shift
- ability to carry clipboards, food products, and small equipment
- physical mobility to inspect and monitor kitchen environment
- ability to stand continuously for at least 50 percent of the day
- able to kneel for inspections
- work in temperature ranges from -10 degrees in freezer to over 100 degrees on front line
Job Qualifications
- More than two years of post high school education but less than a four-year degree
- minimum five to ten years of related experience, preferably managing a unionized kitchen
- advanced knowledge of principles and practices in food profession
- management experience with people and complex problems
- food and beverage management expertise
- oral and written communication skills
- moderate hearing and excellent vision for safety
- comprehension and literacy to read, write and analyze budgets
Job Duties
- Plan and manage the unionized kitchen staff in procurement, production, preparation and presentation of all food
- recommend menu and procedural changes
- manage food and labor costs within approved budget constraints
- adhere to all standard operating procedures and future food programs to ensure consistent quality
- hire, train, develop, empower, coach and counsel kitchen employees
- conduct performance and salary reviews
- resolve problems and provide open communication
- plan and manage food procurement and preparation in a safe and sanitary manner
- monitor and control maintenance and sanitation of kitchen and equipment
- develop and manage kitchen budgets
- develop and implement menus and backup systems to improve revenues and profit margins
- execute and promote accident prevention programs
