Job Requirements

  • High school diploma or GED
  • Three years of progressive experience in food and beverage industry
  • Supervisory experience directing work of others
  • Valid and current TABC Certification
  • Current Food Handler's Manager Certification
  • Knowledge of inventory and cost controls
  • Ability to manage budgets and control costs
  • Strong communication skills
  • Ability to apply math concepts
  • Computer literacy including software relevant to food service operations
  • Ability to work in a fast-paced environment
  • Flexibility to perform additional tasks as assigned

Job Qualifications

  • High school diploma or general education degree (GED)
  • Certification from a accredited Culinary Institute preferred
  • Minimum of three years progressive experience in the food and beverage industry including supervisory responsibilities
  • Valid and current TABC Certification
  • Current Food Handler's Manager Certification
  • Knowledge of inventory and cost of goods controls including food, beverage, kitchen supplies, waste, and employee consumption
  • Ability to work within a budget and manage costs in real time
  • Proficient in reading and interpreting safety rules, operating and maintenance instructions, and procedure manuals
  • Skilled in writing routine reports and correspondence
  • Effective public speaking skills
  • Capability to apply advanced math concepts including algebra
  • Familiarity with relevant computer programs such as Toast, Excel, and Birchstreet

Job Duties

  • Collaborate with other personnel to plan and develop recipes and menus considering seasonal ingredient availability and estimated customer numbers
  • Plan, direct, and supervise food preparation, purchasing, and cooking activities for multiple kitchens or restaurants within the establishment
  • Analyze recipes to assign prices to menu items based on food, labor, and overhead costs
  • Inspect supplies, equipment, and work areas to ensure compliance with established standards and arrange for necessary equipment purchases and repairs
  • Check the quality of raw and cooked food products to meet standards
  • Monitor sanitation practices to ensure employee compliance
  • Determine food presentation and create decorative food displays
  • Record production and operational data accurately
  • Meet with customers regarding menus for special occasions such as weddings and banquets
  • Negotiate prices and order supplies with sales representatives
  • Estimate amounts and costs of required supplies
  • Order food and other supplies to ensure efficient operation
  • Verify quantity and quality of received products
  • Conduct accurate inventory following established standards and procedures
  • Prepare and cook food regularly or for special functions
  • Make personnel decisions such as hiring and firing in consultation with managers
  • Supervise and coordinate cooks and kitchen staff
  • Instruct staff in food preparation, cooking, garnishing, and presentation
  • Determine production schedules and staff requirements for timely service
  • Demonstrate new cooking techniques and equipment to staff
  • Ensure staff understand job requirements and provide necessary training
  • Maintain employee documentation
  • Maintain open communication with staff and management meeting hotel needs
  • Comply with safety, emergency, and OSHA procedures
  • Attend relevant meetings
  • Perform additional duties as needed based on operation demand and customer expectations
