Job Requirements
- Culinary Arts associate's degree
- minimum four years experience as Executive Chef or Chef de Cuisine
- minimum six years supervisory experience
- must obtain ServSafe certification within 90 days
- valid driver's license and vehicle insurance
- ability to work evening, weekend, and holiday shifts
- physical ability to lift up to 50 pounds occasionally
- able to work in a fast-paced, high-demand environment
- may require gaming license per San Manuel Tribal Gaming Commission
- willingness to travel to meetings, trade shows, and conferences
Job Qualifications
- Culinary Arts associate's degree
- minimum four years experience as Executive Chef or Chef de Cuisine
- experience in resort or casino culinary operations preferred
- minimum six years supervisory experience
- proven contributions to Michelin, Forbes, AAA Five-Diamond, or World's 50 Best recognized restaurants
- demonstrated ability to lead trend-driven menu development and luxury dining experiences
- media experience preferred
- expertise in dry-aging, butchery, sous vide, molecular gastronomy, and modern plating
- deep understanding of premium steak cuts, aging, and meat sourcing
- familiarity with luxury dining standards
- comprehensive knowledge of food safety and sanitation regulations
- skill in menu engineering balancing creativity and profitability
- knowledge of wine, spirits, and mixology for curated pairing
- proficiency in sourcing and vendor relations
- excellent communication skills

Job Duties
- Serve as a mentor and technical expert for the culinary team
- oversee all training programs, certifications, and regulatory compliance
- conduct regular evaluations, inspections, and performance reviews
- inspire creativity and professional development through workshops and industry events
- direct all culinary operations ensuring excellence in taste, presentation, and timeliness
- enforce adherence to standards, regulations, and service expectations
- monitor production to minimize waste and maintain consistency
- resolve operational challenges swiftly
- define and execute the culinary vision and develop globally inspired seasonal menus
- collaborate with mixologists and sommeliers for pairing experiences
- lead programming of special culinary events
- monitor and manage food and labor costs
- collaborate with finance and F&B leadership on budgeting
- maintain records for purchasing, inventory, and production
- ensure kitchens and equipment meet sanitation and safety standards
- implement preventive maintenance and safety protocols
- manage procurement of premium ingredients and supplies
- build relationships with vendors
- design and update policies and procedures
