Job Requirements

  • Culinary Arts Associate's degree
  • minimum four years experience as Executive Chef or Chef de Cuisine
  • minimum six years supervisory experience
  • ability to obtain ServSafe certification within 90 days
  • eligibility to obtain and maintain gaming license if required
  • valid driver’s license and vehicle insurance
  • ability to work evenings, weekends, and holidays
  • ability to work in high-volume luxury environment
  • strength to lift up to 50 pounds occasionally
  • effective communication and mobility
  • willingness to travel for meetings and conferences

Job Qualifications

  • Culinary Arts Associate's degree
  • minimum four years experience as Executive Chef or Chef de Cuisine
  • minimum six years supervisory experience
  • experience in resort or casino culinary operations preferred
  • proven contributions to Michelin, Forbes, AAA Five-Diamond, or World’s 50 Best recognized restaurants
  • demonstrated ability in trend-driven menu development and luxury dining
  • preferred media experience including interviews and social presence
  • expertise in dry-aging, butchery, sous vide, molecular gastronomy, and modern plating
  • deep understanding of premium steak cuts, aging processes, and meat sourcing
  • familiarity with Michelin, Forbes Travel Guide, AAA Five-Diamond, and World’s 50 Best criteria
  • comprehensive knowledge of food safety and sanitation regulations
  • ability in menu engineering balancing creativity and profitability
  • understanding of wine varietals, spirits, and mixology for pairing
  • knowledge of inventory, procurement, vendor relations, and sustainability
  • clear and effective communication skills
  • strong creative vision for culinary storytelling
  • financial acumen for managing costs and forecasting
  • event planning and execution skills
  • ability to multitask in a high-pressure environment

Job Duties

  • Serve as mentor and technical expert for culinary team
  • oversee training programs, certifications, and regulatory compliance
  • conduct evaluations, inspections, and performance reviews
  • inspire creativity and professional development through workshops and industry events
  • direct all culinary operations ensuring excellence in taste, presentation, and timeliness
  • enforce adherence to standards and health regulations
  • monitor production to minimize waste and maintain consistency
  • resolve operational challenges during peak periods
  • ensure guest chefs comply with standards
  • define and execute culinary vision for The Pines Modern Steakhouse
  • develop seasonal menus reflecting luxury dining trends
  • collaborate with mixologists and sommeliers for pairing experiences
  • lead special culinary events and off-site activations
  • integrate emerging hospitality trends and culinary techniques
  • monitor and manage food and labor costs to achieve budgets
  • collaborate with finance leadership on forecasting and cost controls
  • maintain accurate purchasing, inventory, and production records
  • ensure kitchen equipment meets sanitation and safety standards
  • maintain high inspection scores
  • implement safety protocols and preventive maintenance
  • manage procurement of premium ingredients
  • build strong vendor relationships and negotiate terms
  • control inventory to prevent shortages or excess
  • design and update policies and procedures
  • promote innovation with advanced equipment and technology
  • perform other duties supporting efficient department operations
