Job Requirements
- Minimum A.S. degree or equivalent culinary experience
- At least 5 years of progressive kitchen management experience
- Proven hands-on chef expertise
- Knowledge of food safety and sanitation standards
- Ability to manage high volume and complex foodservice operations
- Proficiency in computer applications including Microsoft Office and email
- Strong leadership and training skills
- Willingness to comply with company safety and quality policies
- Must participate in client satisfaction initiatives
Job Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience
- Extensive catering experience a plus
- Experience in high volume, complex foodservice operations
- Institutional and batch cooking experience
- Hands-on chef experience
- Knowledge of food and catering trends focusing on quality, production, sanitation, and food cost controls
- Proficient with computers including Microsoft Office, Outlook, email, and internet
- Willingness to participate in client satisfaction programs
- ServSafe certified highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning, and presentation standards
- Complete and utilize daily production worksheets and waste log sheets
- Train kitchen staff in food preparation, safe handling, and sanitation
- Establish and maintain cleaning and maintenance schedules for equipment and work areas
- Maintain inventory of food and non-food supplies within guidelines
- Make decisions regarding utilization of leftover food products
- Comply with federal, state, and local health and sanitation regulations
- Follow facility, department, and company safety policies
- Participate in departmental meetings and staff development programs
