Job Requirements
- Solid knowledge of food and beverage operations
- Proven track record of high-level kitchen management
- Experience managing multiple concepts
- Strong written, verbal, and electronic communication skills
- Ability to sit and/or stand for long periods and work on a computer for extended periods
- Capable of lifting up to 55 lbs
- Must be at least 21 years of age
- Willingness to work flexible hours including weekends and holidays
- Ability to work in various environmental conditions including warm/cold climates, wet surfaces, and exposure to loud noise and fumes
- Availability to work in Oakville, California
Job Qualifications
- At least 5 years of executive kitchen management and operational experience
- Diverse culinary background with proven success in full-service, high-volume, and event-based kitchens
- Strong events background including systems and software fluency
- Culinary degree or equivalent experience preferred
- Current Serv Safe Managers Certification
- Financial acumen including developing COGS line, budgeting, forecasting, and inventory management
- Excellent communication skills including written, verbal, and electronic
- Willingness to work flexible schedules including days, evenings, weekends, and holidays
- Experience with Microsoft Suite preferred
Job Duties
- Coordinate the selection, training, development, and evaluation of employees and managers in kitchens through effective management and leadership
- Adopt and display commitment to the overall culinary branding strategy of Robert Mondavi
- Work in complete partnership with front-of-house leadership exhibiting high levels of communication and joint problem-solving
- Build and maintain a cooperative and inclusive culture across the kitchen team while maintaining quality and encouraging creativity
- Plan and develop seasonal menus considering product availability, seasonality, food cost, and business volume
- Control labor and operating expenses through effective planning, budgeting, and purchasing decisions
- Ensure compliance with sanitation standards and maintain cleanliness and organization of kitchen areas
- Set up control systems to ensure quality and consistency of food preparation
- Work collaboratively with front-of-house on wine and culinary pairings to create branded experiences
- Monitor scheduling to meet weekly business fluctuation demands
- Participate in all food-related marketing and PR opportunities
- Attend regular strategic and operational meetings with the hospitality team
