Job Requirements

  • Must have solid knowledge of food and beverage operations
  • Proven track record of high-level kitchen management and managing multiple concepts
  • Must be at least 21 years of age
  • Ability to sit and/or stand for long periods and work on a computer for extended periods
  • Ability to lift up to 55lbs
  • Willingness to work a flexible schedule including days, evenings, weekends, and holidays
  • Required to hold a current ServSafe Managers Certification
  • Ability to work in diverse environmental conditions including outdoors, warm/cold climates, high places, wet surfaces, exposure to loud noise, fumes, and/or toxic chemicals
  • Ability to work near moving mechanical parts and lift truck traffic

Job Qualifications

  • At least 5 years of executive kitchen management and operational experience with a diverse culinary background and a proven track record in full-service, high-volume, and event-based kitchens
  • Strong events background including systems, software fluency, and execution of planning and day of events
  • Culinary degree or equivalent experience is preferred
  • Required to hold a current ServSafe Managers Certification
  • Financial acumen including developing COGS line, understanding budgets, forecasting, and inventory management
  • Attention to detail and high-pressure problem-solving skills
  • Willingness to work a flexible schedule including days, evenings, weekends, and holidays
  • Experience with Microsoft Suite preferred
  • Elite communication skills including written, verbal, and electronic

Job Duties

  • Coordinate the selection, training, development, and evaluation of employees and managers in kitchens, through effective management and leadership
  • Adopt and display commitment to the overall culinary branding strategy of Robert Mondavi
  • Work in partnership with FOH leadership exhibiting high levels of communication, joint problem-solving, and driving towards best practices
  • Build and maintain a cooperative and inclusive culture across the kitchen team while maintaining quality, fostering respect, and encouraging creativity
  • Plan and develop seasonal menus considering product availability, food cost, and business volume
  • Control labor and operating expenses through effective planning, budgeting, and purchasing decisions
  • Ensure sanitation standards compliance and maintain cleanliness and organization of the kitchen and related areas
