Job Qualifications

  • Two year culinary certificate or degree or equivalent experience
  • minimum five years of progressively responsible work in back of house kitchen operations, including previous experience supervising staff
  • preferred Associate's Degree in Culinary Arts
  • Culinary Institute of America graduate preferred
  • familiarity with modern techniques and trends

Job Duties

  • Create weekly staffing schedules that support budgeted labor costs
  • establish controls to achieve a food cost budget that meets determined metrics while minimizing food and supply waste
  • work with Food and Beverage Manager and Senior Director of Food and Beverage to ensure positive cash flow for the fiscal year
  • utilize daily, weekly, and monthly reporting tools to assess and adjust food and labor cost management
  • perform monthly food inventory
  • develop seasonal menus using local and Copia garden ingredients
  • approve requisition of products and necessary food supplies
  • research and source specialty ingredients with Storeroom Manager
  • evaluate food products to assure quality standards
  • maintain health department rating of A
  • monitor and correct instances of disrepair in Food & Beverage outlets
  • evaluate and document staff performance
  • interview, train, and supervise all staff
  • coordinate with Food & Beverage Manager to ensure efficient staffing for dishwashers
  • develop and achieve best in class service and food standards
  • perform any other duties as assigned
