Job Requirements

  • A.S. degree or equivalent experience
  • Minimum three to five years of progressive culinary or kitchen management experience
  • Hands-on chef experience
  • Knowledge of food safety and sanitation regulations
  • Ability to maintain inventory and control food costs
  • Proficiency with Microsoft Office and other computer applications
  • ServSafe certification preferred
  • Strong leadership and communication skills
  • Ability to ensure compliance with health and safety policies

Job Qualifications

  • A.S. degree or equivalent experience
  • Minimum of three to five years of progressive culinary or kitchen management experience
  • Extensive catering experience is a plus
  • Experience in high volume, complex foodservice operations
  • Experience with institutional and batch cooking
  • Hands-on chef experience
  • Knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls and presentation
  • Proficient with computers including Microsoft Office, Outlook, e-mail and internet
  • ServSafe certification highly desirable

Job Duties

  • Plans regular and modified menus according to established guidelines
  • Follows standardized recipes, portioning and presentation standards
  • Completes and utilizes daily production worksheets and waste log sheets
  • Tastes completed meals to ensure quality
  • Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
  • Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
  • Maintains inventory of food and non-food supplies within established guidelines
  • Makes decisions regarding utilization of leftover food products within company guidelines
  • Complies with federal, state and local health and sanitation regulations and department procedures
  • Follows facility, department and company safety policies
  • Participates in departmental meetings, staff development and professional programs
