Job Qualifications

  • Experience in kitchen or food service management
  • Strong leadership and supervisory skills
  • Knowledge of food safety and sanitation standards
  • Ability to develop menus and write recipes
  • Excellent communication skills in English
  • Ability to manage inventory and food costs
  • Proficiency in staff training and performance management
  • Experience in event and banquet operations

Job Duties

  • Maintain knowledge of and ensure compliance with all departmental and hotel policies and procedures
  • Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication, and recommend discipline or termination when appropriate
  • Establish daily priorities and assign production and preparation tasks to staff
  • Review daily menu specials and provide feedback to Sous Chefs
  • Review banquet event orders and note any changes
  • Communicate clearly with staff verbally and in writing
  • Take physical inventory of specified food items daily
  • Requisition, receive, and store supplies correctly
  • Meet with Executive Steward to review equipment needs, cleaning schedules, and health and safety follow-up
  • Ensure staff attendance and document absences
  • Maintain stocked kitchen work areas with proper tools and supplies
  • Keep recipe cards, schedules, and plating guides current and posted
  • Ensure menu items are prepared to standards
  • Monitor and rectify staff performance deficiencies
  • Observe guest reactions and ensure satisfaction
  • Conduct walk-throughs to maintain quality and standards
  • Develop new menu items and write recipes
  • Assist catering with special menus and client meetings
  • Review sales and food costs daily and resolve discrepancies
  • Efficiently utilize excess items
  • Oversee and direct training programs
  • Prepare and adjust weekly work schedules
  • Comply with attendance rules and be available to work regularly
  • Perform other job-related duties as assigned
