Job Requirements

  • Culinary degree or equivalent high-level culinary experience
  • Minimum 5-7 years of progressive leadership experience as an Executive Chef or similar role
  • Strong background in wellness-focused, performance, or athletic dining preferred
  • Proven ability to lead, develop, and inspire a culinary team
  • ServSafe Manager certification or equivalent
  • Ability to work flexible hours including nights, weekends, and holidays
  • Excellent communication and organizational skills
  • Demonstrated success managing budgets and food costs

  • Demonstrated success managing budgets, food cost, and labor efficiency
  • Excellent communication and organizational skills with cross-department collaboration
  • ServSafe Manager certification or equivalent
  • Ability to work flexible hours including nights, weekends, and holidays

Job Duties

  • Manage, develop, and mentor a culinary staff of 35 full-time and part-time employees
  • Initiate employment actions including hiring, firing, and disciplining staff
  • Ensure event staff understand workplace expectations and provide ongoing training and mentoring
  • Maintain budgeted food percentages through effective control measures including portion control and inventory management
  • Control labor costs via scheduling, cross-training, and monitoring breaks
  • Oversee menu development ensuring quality, consistency, and adherence to concept standards
  • Supervise kitchen operations including line setup, prep, and breakdown
  • Coordinate maintenance and repair of kitchen equipment
  • Manage delivery and setup for catered services
  • Organize skills training and orientation for new employees
  • Foster positive employee relations and maintain compliance with health, safety, and employment regulations
  • Ensure accurate kitchen record keeping and scheduling
  • Promote teamwork through effective communication and goal setting
  • Oversee production of staff meals aligned with health and portion requirements
  • Provide overall leadership of culinary program at the Mercury Training Facility
  • Design performance-driven menus tailored to athlete nutritional needs and dietary restrictions
  • Lead and mentor sous chefs and cooks to maintain culinary standards
  • Collaborate with nutritionists and medical staff to align menus with health goals
  • Uphold food safety and sanitation standards including FIFO, ServSafe, and HACCP protocols
  • Oversee recipe development, production, and presentation for daily and special events
  • Maintain cleanliness and organization across all kitchen areas
  • Act as a visible, hands-on leader working alongside the culinary team
