Job Qualifications

  • Minimum of 2-3 years of kitchen management experience in a full service restaurant or events venue
  • Demonstrated and verifiable track record of meeting projected food costs
  • Professional appearance and presentation
  • Proficiency with computer software including MS Word, Excel and Outlook
  • Current Food Handler's card and alcohol service permit if required
  • Knowledge of employee scheduling in a hospitality setting
  • Ability to obtain and maintain certification in a nationally recognized sanitation program
  • Technical proficiency in food preparation methods
  • Ability to interact positively with diverse personalities and work situations

  • Experience in staff training, evaluation, motivation, coaching and counseling

Job Duties

  • Managing, developing and mentoring a culinary team of 35 employees including hiring, firing and disciplining
  • Ensuring event staff understand workplace expectations by providing ongoing coaching and support
  • Controlling food costs through effective portion control, inventory management, purchasing, and waste reduction
  • Scheduling kitchen staff and monitoring labor costs including managing break documentation
  • Overseeing food preparation to meet Oak View Group quality and consistency standards
  • Developing menus that maintain quality, consistency, and style
  • Monitoring food production to ensure adherence to recipe specifications and sanitary standards
  • Supervising line setup, prep, and breakdown activities
  • Coordinating kitchen equipment maintenance and repairs
  • Managing catered service delivery and food service setup
  • Organizing staff training, development and orientation
  • Maintaining a positive, compliant employee relations environment
  • Staffing, training, evaluating and counseling kitchen staff
  • Promoting teamwork and communication
  • Coordinating production of staff meals
  • Rapidly solving operational problems
  • Ensuring compliance with health, sanitation, safety and employment regulations
  • Maintaining kitchen administrative records including food inventory and invoices
  • Managing employee schedules and uniform compliance
  • Leading and coaching by example to achieve quality management objectives
