Job Requirements

  • Bachelor's degree or equivalent experience
  • Minimum of five years culinary management experience
  • In-depth knowledge of HACCP and food safety standards
  • Experience managing food production in a healthcare or similar environment
  • Strong leadership and team management capabilities
  • Effective communication skills across all organizational levels
  • Ability to manage budgets and control expenses
  • Availability to work flexible hours including early mornings and late nights
  • Ability to work under pressure and meet deadlines
  • Physical ability to lift and pull heavy items associated with food service operations

Job Qualifications

  • Bachelor's degree in culinary arts, hospitality management, nutrition, or related field preferred
  • Proven experience as an executive chef or in a senior culinary management role, preferably within healthcare or large institutional food service settings
  • Strong knowledge of food safety regulations including HACCP compliance
  • Experience in menu development focused on health, nutrition, and wellness
  • Demonstrated leadership skills with ability to motivate and manage diverse teams
  • Excellent communication, organizational, and interpersonal skills
  • Proficient in budget management and cost control strategies
  • Ability to implement quality assurance and improvement programs
  • Familiarity with industry trends and operational best practices
  • Ability to work flexible hours including early mornings and late nights

Job Duties

  • Oversee all aspects of culinary planning and production for retail, patient, and catering menus at NYU Langone Orthopedic Hospital
  • Collaborate with the culinary team to develop world class menus and recipes which are operationally efficient, on-trend, health and wellness focused, and delicious
  • Plan and develop a culinary specific quality improvement assurance program, executing and implementing departmental QIA standards
  • Ensure adherence to the mission, vision, and values of the Food and Nutrition Services Department and NYU Langone Health to achieve world class food and hospitality levels
  • Maintain a high level of employee engagement and satisfaction by fostering a positive work environment and culture of excellence
  • Ensure sanitary, safe, and efficient operations in compliance with all regulatory bodies and department policies
  • Manage operating and capital budgets by reviewing and supervising resource utilization and developing cost savings and revenue generation strategies
  • Direct daily food production operations including menu planning, purchasing, ordering, inventory, and food preparation
  • Ensure compliance of kitchen, equipment, and storage facilities with NYU Langone, city, state, and federal regulations and standards
  • Enforce HAACP, quality assurance, food handling, safety, operational, and personnel policies according to regulatory requirements
  • Provide performance feedback and evaluations to employees and managers to motivate and improve work outcomes
  • Manage inventory and purchasing processes from approved vendors
  • Hire, train, coach, counsel, and supervise non-union and union staff
  • Ensure adherence to NYU Langone recipes and plate presentations
  • Maintain staff schedules, job descriptions, and workflow assignments
  • Comply with NYU Langone clinical and dietary food regulations
  • Perform other assigned duties as needed
