Job Requirements

  • Minimum 7 years of kitchen leadership experience in luxury hotels or resorts
  • Experience with Indian cuisine
  • Formal culinary training or equivalent degree preferred
  • Strong organizational communication and leadership skills
  • Ability to work effectively in a fast-paced high-volume kitchen
  • Knowledge of food safety and sanitation regulations
  • Proven ability to develop menus and manage kitchen staff

Job Duties

  • Supervise line cooks and culinary utility staff overseeing all Indian kitchen stations during dinner service
  • Lead tandoor and bread stations preparing meats seafood and traditional breads like naan and roti using authentic techniques
  • Ensure curry bases such as makhani korma and chettinad are properly finished seasoned and plated
  • Act as main liaison with front-of-house managing ticket flow responding to service notes and maintaining high standards in timing temperature and presentation
  • Monitor daily food needs requisition supplies and assist in special event execution featuring ceremonial or festive Indian dishes
  • Support training staffing and performance management of the culinary team recommend equipment repairs and resolve guest concerns within scope while maintaining smooth and collaborative kitchen operation
  • Lead mentor and train a diverse culinary team to maintain highest standards of food quality and presentation
  • Develop innovative menus aligned with wellness philosophy and seasonal ingredients
  • Oversee food preparation to ensure consistency safety and compliance with sanitation regulations
  • Maintain food cost controls and assist in budgeting and forecasting
  • Contribute to positive team environment and promote culture of excellence and accountability
