Job Requirements

  • 21+ years of age
  • 2+ years of leadership experience in high-volume fine dining culinary setting
  • 5+ years of experience in high-volume fine dining culinary setting
  • Previous experience managing employees under collective bargaining agreement preferred

Job Duties

  • Owns, leads and oversees daily commissary kitchen operations
  • Manage fiscal budgets, labor productivity and scheduling
  • Control inventory and uphold guest service standards
  • Develop and execute menu strategies for profitability
  • Represent commissary kitchens in meetings
  • Execute policies, operating procedures, pricing initiatives and training programs
  • Maintain highest health, sanitation and cleanliness standards
  • Manage human resources including team development, hiring, training and succession planning
  • Interact with guests to ensure satisfaction and resolve complaints
  • Collaborate with executive chefs and directors for seamless kitchen operations
  • Maintain excellent knowledge of food and beverage products, menu items and kitchen equipment
  • Perform other job-related duties as assigned
