Job Requirements

  • Associate degree or equivalent experience
  • Minimum 5 years of progressive culinary or kitchen management experience
  • Extensive catering experience preferred
  • Experience in high-volume and complex foodservice operations
  • Institutional and batch cooking knowledge
  • Hands-on chef experience
  • Proficiency with computers including Microsoft Office and internet applications
  • Willingness to engage in client satisfaction activities
  • ServSafe certification preferred

Job Duties

  • Lead daily culinary production in meal preparation, ensure food quality and presentation, compliance with safety and sanitation standards, manage team productivity and cost control
  • Determine food presentation and create decorative displays
  • Provide direction on menu development based on product availability
  • Source fresh food and monitor produce and meat freshness
  • Conduct inspections for consistency in seasoning, portion, and appearance
  • Research customer preferences and develop menus incorporating local flavors
  • Prepare and cook foods for regular service and special functions
  • Demonstrate cooking techniques and equipment to staff
  • Supervise cooks and food preparation workers
  • Ensure compliance with health, safety, and sanitation standards
  • Set performance standards and monitor team performance
  • Communicate safety procedures and ensure employee understanding
  • Monitor quality of raw and cooked food
  • Follow and enforce food safety guidelines
  • Maintain purchasing, receiving, and food storage standards
  • Manage department controllable expenses
  • Develop and implement purchasing and receiving control procedures
  • Analyze financial and operational data to adjust plans
  • Manage department budget and control labor and food costs
  • Identify revenue and expense opportunities and issues
  • Oversee food inventory and disbursement
  • Schedule staff based on forecasts
  • Provide training, resources, and coaching to maximize team engagement
  • Maintain professional appearance and attitude with guests
  • Handle guest complaints and improve customer service
  • Lead team meetings and establish performance goals
  • Utilize an open-door policy for employee feedback
  • Develop strategies to enhance team engagement
  • Ensure fair treatment of employees
  • Provide ongoing feedback and counseling
