Job Requirements
- Education level of associate degree or equivalent
- Minimum of 5 years progressive experience in culinary and kitchen management
- Proven hands-on experience as a chef
- Ability to manage high volume foodservice operations
- Computer literacy including Microsoft Office and internet
- Strong knowledge of food safety and sanitation
- Willingness to engage in client satisfaction activities
- ServSafe certification preferred
Job Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary and kitchen management experience
- Extensive catering experience is a plus
- Experience in high-volume, complex foodservice operations
- Institutional and batch cooking experience
- Hands-on chef experience
- Knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Proficient with Microsoft Office, Outlook, email, and the internet
- Willingness to participate in client satisfaction programs
- ServSafe certified is highly desirable
Job Duties
- Plans regular and modified menus according to established guidelines
- Follows standardized recipes, portioning and presentation standards
- Completes and utilizes daily production worksheets and waste log sheets
- Tastes completed meals to ensure quality
- Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- Maintains inventory of food and non-food supplies
- Makes decisions regarding utilization of leftover food products
- Complies with federal, state and local health and sanitation regulations
- Participates in departmental meetings and professional development
