Job Requirements
- Education equivalent to an associate degree or A.S.
- Minimum 5 years of progressive culinary or kitchen management experience
- Proven hands-on chef experience
- Knowledge of food safety and sanitation standards
- Ability to train and mentor kitchen staff
- Skilled in inventory and waste management
- Familiarity with federal, state, and local health regulations
- Proficient with computer applications including Microsoft Office
- Strong communication and collaboration skills
- Commitment to safety and quality compliance
- Ability to handle high volume and complex foodservice operations
- Must be ServSafe certified or willing to obtain certification
- Willingness to participate in client satisfaction initiatives
Job Qualifications
- Associate degree or equivalent experience
- 5+ years of progressive culinary/kitchen management experience depending on formal degree or training
- Hands-on chef experience
- Extensive catering experience a plus
- Experience in high volume, complex foodservice operations
- Institutional and batch cooking experience
- Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Proficiency with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and the internet
- ServSafe certification highly desirable
- Willingness to participate in client satisfaction programs and activities
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning and presentation standards
- Complete and use daily production worksheets and waste log sheets
- Taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- Maintain inventory of food and non-food supplies within guidelines
- Make decisions regarding utilization of leftover food products within company guidelines
- Comply with federal, state and local health and sanitation regulations and company procedures
- Follow facility, department and company safety policies and procedures
- Participate and attend departmental meetings, staff development, and professional programs
- Collaborate with district chefs and department leaders on menu planning and recipe execution
- Mentor and develop culinary team through coaching and training
- Oversee waste management to minimize excess
- Uphold sanitation and safety standards throughout kitchen operations
- Ensure exceptional food quality, consistency, and presentation across the account
- Foster a creative and collaborative kitchen environment
