Job Requirements

  • Associate degree or equivalent experience
  • Minimum 5 years of progressive culinary or kitchen management experience
  • Hands-on chef experience
  • Knowledge of food safety and sanitation regulations
  • Proficient with Microsoft Office and computer applications
  • ServSafe certification preferred
  • Ability to lead and train kitchen staff
  • Experience managing budgets and food cost controls
  • Strong communication and team leadership skills
  • Willingness to engage in client satisfaction initiatives

Job Qualifications

  • A.S. degree or equivalent experience
  • Minimum 5 years of progressive culinary/kitchen management experience
  • Extensive catering experience preferred
  • Experience in high volume, complex foodservice operations is highly desirable
  • Knowledge of institutional and batch cooking
  • Hands-on chef experience is required
  • Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
  • Proficiency with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and internet
  • Willingness to participate in client satisfaction programs and activities
  • ServSafe certification highly desirable

Job Duties

  • Plan regular and modified menus according to established guidelines
  • Follow standardized recipes, portioning and presentation standards
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
  • Establish and maintain cleaning and maintenance schedules for kitchen equipment and work areas
  • Maintain inventory of food and non-food supplies within established guidelines
  • Make decisions regarding utilization of leftover food products
  • Comply with federal, state, and local health and sanitation regulations and department procedures
  • Participate in departmental meetings and staff development programs
  • Lead daily culinary production ensuring meal quality, presentation, safety standards, team productivity, cost controls, and profitability
  • Provide direction on menu development with seasonal and special ingredients
  • Monitor freshness of produce and meats
  • Conduct quality inspections for seasoning, portion, and appearance
  • Supervise and coordinate activities of cooks and food preparation workers
  • Manage purchasing, receiving, and food storage standards
  • Analyze financial and operational information to adjust business plans and labor requirements
  • Manage department controllable expenses including food cost and supplies
  • Develop and implement business strategies aligned with client mission and vision
  • Create 100% resident satisfaction through training and team engagement
  • Handle guest problems and complaints effectively
  • Lead team member meetings and establish performance, budget, and team goals
  • Communicate performance expectations and provide coaching and counseling to team members
