Job Requirements

  • Minimum of A.S. degree or equivalent experience
  • at least 5 years of culinary and kitchen management experience
  • experience in catering and high-volume foodservice operations preferred
  • must have hands-on chef experience
  • knowledge of food safety and sanitation standards
  • proficiency in computer applications including Microsoft Office and email
  • ability to comply with federal, state, and local health regulations
  • must be willing to participate in client satisfaction activities
  • ServSafe certification preferred

Job Qualifications

  • A.S. degree or equivalent experience
  • 5+ years of progressive culinary and kitchen management experience
  • extensive catering experience a plus
  • high volume, complex foodservice operations experience
  • institutional and batch cooking experience
  • hands-on chef experience
  • comprehensive knowledge of food trends, production, sanitation, food cost controls, and presentation
  • proficiency with Microsoft Office, Outlook, email, and the internet
  • willing to participate in client satisfaction programs
  • ServSafe certified highly desirable

Job Duties

  • Plan regular and modified menus according to established guidelines
  • follow standardized recipes, portioning and presentation standards
  • complete daily production worksheets and waste logs
  • train kitchen staff in food preparation, safe handling, and equipment operation
  • establish and maintain cleaning and maintenance schedules
  • maintain inventory of food and non-food supplies
  • make decisions regarding utilization of leftover food products
  • comply with health and sanitation regulations
  • follow safety policies and procedures
  • participate in departmental meetings and staff development programs
