Job Requirements
- Minimum of A.S. degree or equivalent experience
- at least 5 years of culinary and kitchen management experience
- experience in catering and high-volume foodservice operations preferred
- must have hands-on chef experience
- knowledge of food safety and sanitation standards
- proficiency in computer applications including Microsoft Office and email
- ability to comply with federal, state, and local health regulations
- must be willing to participate in client satisfaction activities
- ServSafe certification preferred
Job Qualifications
- A.S. degree or equivalent experience
- 5+ years of progressive culinary and kitchen management experience
- extensive catering experience a plus
- high volume, complex foodservice operations experience
- institutional and batch cooking experience
- hands-on chef experience
- comprehensive knowledge of food trends, production, sanitation, food cost controls, and presentation
- proficiency with Microsoft Office, Outlook, email, and the internet
- willing to participate in client satisfaction programs
- ServSafe certified highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning and presentation standards
- complete daily production worksheets and waste logs
- train kitchen staff in food preparation, safe handling, and equipment operation
- establish and maintain cleaning and maintenance schedules
- maintain inventory of food and non-food supplies
- make decisions regarding utilization of leftover food products
- comply with health and sanitation regulations
- follow safety policies and procedures
- participate in departmental meetings and staff development programs
