Job Requirements
- Education equivalent to A.S. or relevant culinary training
- At least five years of culinary or kitchen management experience
- Strong hands-on chef skills
- Experience in high-volume, complex foodservice settings
- Knowledge of food safety and sanitation regulations
- Proficiency in computer applications such as Microsoft Office and email
- Ability to train and lead kitchen staff
- ServSafe certification preferred
- Commitment to client satisfaction and quality food preparation
- Availability to comply with safety and sanitation audits
- Effective communication and organizational skills
Job Qualifications
- A.S. degree or equivalent experience
- Five or more years of progressive culinary/kitchen management experience
- Extensive catering experience preferred
- Experience with high volume, complex foodservice operations
- Knowledge of institutional and batch cooking
- Hands-on chef experience required
- Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Proficiency with Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and internet
- ServSafe certification highly desirable
- Willingness to participate in client satisfaction programs and activities
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning, and presentation standards
- Complete and utilize daily production worksheets and waste log sheets
- Taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas
- Ensure kitchen staff follow and complete cleaning schedules
- Maintain inventory of food and non-food supplies within established guidelines
- Make decisions regarding utilization of leftover food products within company guidelines
- Comply with federal, state and local health and sanitation regulations as evidenced through audits
- Follow facility, department, and company safety policies and procedures
- Participate and attend departmental meetings, staff development, and professional programs
- Foster client satisfaction through active engagement and communication
