Job Requirements
- Education level of associate degree or equivalent experience
- Minimum of three years progressive culinary or kitchen management experience
- Strong knowledge of food safety and sanitation regulations
- Ability to plan menus and control food costs
- Computer proficiency including Microsoft Office and email
- Experience in high volume food service operations preferred
- ServSafe certification preferred
Job Qualifications
- A.S. or equivalent experience
- Three plus years of progressive culinary/kitchen management experience
- Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
- Experienced with computers, including Microsoft Office (Word, Excel and PowerPoint), Outlook, E-mail and the Internet
- High volume, complex foodservice operations experience - highly desirable
- ServSafe certified - highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- Train kitchen staff in food preparation, safe handling, and operation of equipment, food safety and sanitation based on company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- Comply with federal, state and local health and sanitation regulations and department sanitation procedures
- Perform other duties as assigned
