Job Requirements

  • High school diploma or equivalent
  • Completion of a culinary training program
  • Minimum 5 years culinary management experience
  • Ability to work with minimal supervision
  • Critical thinking skills
  • Decisive judgment
  • Ability to work in a stressful environment
  • Physical capability to perform job duties including bending, stooping, lifting and standing for extended periods

Job Qualifications

  • High school diploma or equivalent
  • Successful completion of a culinary training program
  • At least 5 years of culinary management experience
  • Knowledge of HACCP and food safety regulations
  • Strong leadership and communication skills
  • Ability to work independently and make decisions under stress
  • Experience in menu development and kitchen sanitation

Job Duties

  • Orient, train, coach, discipline and evaluate kitchen staff
  • Monitor and enforce staff compliance with HACCP and departmental guidelines for food requisition, storage, handling and preparation
  • Review menus and special orders to determine food types and quantities
  • Develop standardized recipes for food preparation
  • Prepare and direct meal production to meet service standards
  • Collaborate on food preparation schedules and coordinate with departments and vendors for special events
  • Participate in departmental budget development and assist with policies on production, purchasing, sanitation and inventory management
