Job Requirements
- Associate degree or equivalent experience
- Minimum of 5 years' experience in culinary or kitchen management
- Experience in catering and high volume foodservice operations preferred
- Hands-on culinary experience necessary
- Knowledge of food safety, sanitation, and cost controls
- Proficient computer skills including Microsoft Office suite
- Ability to participate in client satisfaction and engagement programs
- Possession or willingness to obtain ServSafe certification
Job Qualifications
- A.S. or equivalent experience
- Minimum 5 years of progressive culinary or kitchen management experience depending on formal degree or training
- Extensive catering experience a plus
- Experience in high volume, complex foodservice operations highly desirable
- Institutional and batch cooking experience
- Hands-on chef experience required
- Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Proficiency with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, e-mail, and internet
- Willingness to participate in client satisfaction programs and activities
- ServSafe certification highly desirable
Job Duties
- Lead daily culinary production including meal preparation, ensuring food quality and presentation, compliance with safety and sanitation standards, monitoring team member productivity and controlling costs
- Determine food presentation and create decorative food displays
- Direct menu development based on product availability and create distinctive specials incorporating seasonal ingredients
- Source fresh food and monitor produce and meat for freshness
- Maintain product consistency through inspections of seasonings, portions, and food appearance
- Research customer preferences and develop menus incorporating local foods and flavors
- Prepare and cook foods regularly and for special events
- Demonstrate new cooking techniques and equipment to staff
- Supervise and coordinate activities of cooks and food preparation workers
- Ensure compliance with health, safety, and sanitation standards
- Provide guidance, set performance standards, and monitor staff performance
- Communicate safety procedures and ensure employee understanding and compliance
- Monitor the quality of raw and cooked food products
- Enforce food safety and sanitation guidelines
- Maintain purchasing, receiving, and food storage standards
- Participate in business strategy development aligned with the client’s mission and values
- Manage controllable expenses such as food cost, supplies, uniforms, and equipment
- Develop and implement purchasing and receiving control procedures
- Analyze financial and operational data to adjust labor, costs, and business plans
- Develop and manage the department budget while controlling labor and food costs
- Identify major revenue and expense opportunities and potential problems
- Oversee food inventory, purchasing, and distribution of supplies
- Schedule staff based on forecasted volumes
- Create 100% resident satisfaction through team training and engagement
- Maintain professional interactions with residents and staff
- Improve service through communication, coaching, and feedback
- Promote service behaviors that exceed customer expectations
- Empower employees to deliver excellent customer service
- Use teamwork to support guests and employees
- Respond to and handle guest complaints and problems
