Job Requirements
- High school diploma or GED
- minimum eight years experience in back-of-house restaurant environment
- minimum five years of back-of-house management experience in a high-volume restaurant
- ability to read, write and understand English
- ability to perform duties in confined spaces and extreme temperature ranges
- physical ability to stand, walk, bend, reach and perform repetitive motions for the duration of the shift
- ability to lift, move and maneuver up to 50 lbs
- willingness to work in hot, damp, and noisy kitchen environments
Job Qualifications
- High school diploma or GED
- associate degree in Food and Beverage preferred
- minimum eight years experience in back-of-house restaurant environment
- minimum five years of back-of-house management experience in a high-volume restaurant
- thorough knowledge of hot, cold food and pastry preparation
- skilled in the use of slicers, mixers, grinders, and food processors
- basic math skills for understanding recipes and portion sizes
- proficient in reading and writing English for communication and documentation
- sufficient manual dexterity for kitchen equipment
- ability to work in confined spaces and varying temperature conditions
- ability to remain on feet for entire shifts
- ability to lift and maneuver up to 50 lbs
- capable of performing repetitive physical motions
Job Duties
- Manage overall restaurant operations including scheduling and supervising cooks
- coordinate and actively participate in event food operations
- monitor food and labor costs
- visually inspect and select the freshest ingredients
- participate in food production
- hire, train, and supervise kitchen staff
- evaluate performance and provide guidance
- ensure compliance with health department regulations regarding food receiving, storage and rotation
- assign detailed duties to kitchen associates
- write, cost, test, maintain and update menu specifications and recipes
- enforce inventory and labor control measures
- coach and develop kitchen team
- ensure all workstations, storerooms, and dining areas are clean, sanitized, and safe
