Job Requirements
- Ability to work standing for long periods
- Ability to perform reaching, stooping and crouching repeatedly
- Dexterity in hands and fingers for food preparation
- Adequate visual abilities for food quality and safety
- Sense of smell and taste for food quality
- Must wear closed toe, non-canvas, non-skid shoes
- High school diploma or equivalent
- Minimum 5 years high-volume cooking experience
- Minimum 3 years as Executive Chef
- Ability to lead and manage culinary teams
- Compliance with company grooming standards
- Ability to participate in culinary competitions
- Knowledge of city and county health department regulations
Job Qualifications
- Proven culinary accomplishments by personal recognition
- Basic reading, writing, mathematical and computer skills
- Minimum 5 years high-volume cooking experience with fine dining knowledge
- At least 3 years experience as an Executive Chef in hotel or fine dining
- Strong interpersonal, verbal and written communication skills
- Leadership, training and staff motivation experience
- Even-tempered with consistency and fairness
- Highly organized and deadline oriented
- Good judgement of people and situations
- Ability to manage details and high event volume
- Neat, well-groomed and professional appearance
- Exceptional guest and customer service skills
Job Duties
- Review and approve recipe files and discuss culinary improvements with staff
- Use high-quality food items that are creatively prepared and cost-effective
- Review and approve food orders for special items
- Monitor finished products for quality and consistency
- Oversee kitchen cleanliness, appearance, and safety
- Ensure kitchen equipment maintenance and compliance with health standards
- Troubleshoot unexpected kitchen situations
- Manage waste disposal properly
- Oversee menu creation, production, and special event ordering
- Price menu and catering items maintaining food and cost control guidelines
- Develop seasonal specials and approve seasonal menu and pastry items
- Conduct product taste panels with Food & Beverage Management
- Participate in culinary events and competitions
- Manage food costs to meet budgetary goals
- Discuss daily food cost reports with kitchen and F&B staff
- Code invoices and update prices weekly
- Monitor kitchen payroll according to budgets
- Interview and hire kitchen staff and manage staffing changes
- Review weekly schedules for forecast and budget accuracy
- Train, develop, and motivate culinary staff
- Provide positive leadership and employee counseling
- Delegate responsibilities to cultivate supervisors and subordinates
- Collaborate with management team completing assigned projects
- Maintain grooming standards and wear provided uniform
