Job Requirements
- Culinary degree or certification from accredited culinary school or on-the-job culinary related training or apprenticeship
- minimum 5 years professional cooking experience including authentic Chinese regional cuisine in high-volume or specialty kitchen
- proficiency in authentic cooking techniques and regional Chinese cuisine
- knowledge of HACCP, FDA, and food hygiene regulations
- ability to work in hot and refrigerated environments
- ability to stand for extended periods and lift up to 50 lbs
- ability to comprehend, speak, read, and write English
Job Qualifications

Job Duties
- Design, implement, and lead authentic Chinese menu presentations for assigned airline customers
- create highly detailed recipes and yield specifications using proprietary software
- execute culinary process steps, adhering to deadlines and cost targets
- plan, prepare, and execute customer menu presentations, documenting specification changes
- research new products and ingredients to enhance menu offerings
- perform yield studies to ensure accurate cost analysis and budget compliance
- design recipes that meet HACCP and FDA standards
- support start-up of new customer menus and seasonal offerings
- train executive chefs and culinary teams on menu cycle changes
- travel domestically and internationally to support start-ups, menu presentations, and training
- audit and critique customer menus via photo or in-house reviews
- act as culinary representative interfacing with airline customers
- incorporate lean manufacturing and quality initiatives into food production and packaging
- prepare and cook authentic Chinese dishes including entrees, sides, sauces, and specialty items
- execute recipes with consistency following portioning, seasoning, and presentation standards
- plate dishes according to specifications ensuring visual appeal and secure packaging for flight readiness
- adhere to airline, HACCP, and food safety regulations
- coordinate with other stations for timely production and delivery
- maintain cleanliness and organization of work areas
- monitor inventory, report shortages, and support waste reduction
- organize, staff, and direct kitchen operations
- guide, motivate, and develop team members
- plan, implement, and control project budgets
- initiate corrective actions when necessary
