Job Requirements
- Must be able to obtain state health department certificate for food safety and sanitation
- CPR and First Aid certification required
- Ability to lift up to 50 lbs
- Ability to stand and walk for extended periods
- Minimum four years culinary management experience
- Strong leadership and communication skills
- Ability to work in a fast-paced environment
- Knowledge of health department standards
- Must be able to demonstrate hands-on management style
- Availability to work flexible hours including weekends and holidays
Job Qualifications
- Four-year college degree in related field preferred
- Culinary degree preferred
- At least eight years in related field preferred
- Minimum of four years in culinary management preferably in a similarly sized hotel
- Ability to obtain state health department certificate for food safety and sanitation
- CPR and First Aid certification required
- Proven track record in quality food operations
- Strong leadership and staff training skills
- Knowledge of food cost control and portion control mechanisms
- Excellent communication and organizational skills
Job Duties
- Possess a hands-on style of management
- Maintain inventory and coordinate purchases for food production
- Produce and organize daily purchase for multiple outlet production
- Work with recipes to specific guidelines in production and understanding basic food cost and portion control mechanisms
- Conduct monthly inventory as directed from CFO
- Lead and train staff, conduct reviews
- Ensure proper production of food items, working efficiently to achieve maximum productivity
- Prepare food items using methods such as roasting, broiling, grilling, frying, sautéing, steaming, poaching, braising and shot order cookery
- Perform duties on both hot and cold lines as well as food preparation
- Practice safe and proper use of equipment at all times
- Label, date, store and rotate all products while maintaining assigned par levels
- Practice basic sanitation, food rotation, and cooler cleanliness
- Comply with health department standards
- Maintain a safe working environment and report unsafe acts or conditions
- Maintain professional working relationship with outlet front of house managers
- Plan and execute staff training and scheduling
- Create and implement new menus and individual menu items
- Audit food storeroom and enforce safety procedures
- Supervise cleaning of walk-in and reach-in boxes
- Maintain vacation schedules
- Report equipment repairs
- Participate in VIP parties and staff meetings
- Hire, train, supervise, schedule and participate in activities of culinary staff
- Actively communicate with customers to promote food products and manage staff
- Monitor team performance and production flow
- Organize and conduct culinary team meetings
- Assist Food and Beverage Director in estimating annual food budget
- dine at local restaurants to observe trends
- Monitor outlets during peak periods
- Participate in Manager-on-Duty program as designated
