Job Requirements
- 5+ years experience in a professional high volume up-scale kitchen and fast paced environment
- Culinary certificate or degree preferred
- Certification in food handlers manager program
- Ability to stand and exert well-paced mobility for up to 8 hours
- Willingness to work varied schedules including nights, weekends, and holidays
- Professional appearance and demeanor
- Ability to lift and transport at least 50 pounds
- Capability to push/pull carts and equipment up to 100 pounds
- Effective communication skills
- Ability to work under variable temperature and noise conditions
Job Qualifications
- 5+ years experience in a professional high volume up-scale kitchen and fast paced environment
- Culinary certificate or degree by an accredited culinary agency preferred
- Solid knowledge of current food trends and ethnic style cooking
- Certification in food handlers manager program
- Strong leadership and team building skills
- Excellent communication and customer service abilities
- Ability to manage budgets and control costs
- Knowledge of food safety and sanitation regulations
- Experience in menu planning and inventory management
- Physical stamina and resilience for long periods of standing and heavy lifting
Job Duties
- Plan and manage kitchen staff in procurement, production, preparation, and presentation of all food
- Ensure compliance with safety and sanitation standards
- Manage food and labor costs within budget constraints
- Recommend menu and procedural changes
- Interact with guests and staff to obtain feedback and resolve complaints
- Schedule staffing levels using forecasts while adhering to labor guidelines
- Conduct pre-shift meetings and monitor staff performance
- Hire, train, and foster a team-oriented work environment
- Collaborate with other hotel departments to enhance guest experiences
- Ensure recipes are accurately costed and adhered to minimizing waste
- Maintain culinary department equipment and update operations manuals
- Enforce compliance with company policies and food safety regulations
- Creative menu planning for restaurant and banquets
- Manage inventory stock levels according to hotel occupancy
- Delegate responsibilities and provide coaching to culinary team members
- Communicate effectively with management, guests, and co-workers
