Job Requirements
- Ability to work from a standing position for extended periods
- Ability to perform reaching, stooping, and crouching motions repeatedly
- Dexterity in hands and fingers to manipulate tools and utensils effectively
- Visual acuity including closeness and depth perception for quality and safety
- Sense of smell and taste to ensure food quality
- Closed toe, non-canvas, and non-skid shoes as required personal protective equipment
Job Qualifications
- Proven record of culinary accomplishments through personal recognitions
- Basic reading, writing, mathematical, and computer skills
- Minimum five years of high-volume cooking experience with extensive knowledge in fine dining
- Minimum three years experience as an Executive Chef in a hotel or fine dining restaurant
- Strong interpersonal, verbal, and written communication skills
- Ability to lead, train, and motivate culinary staff
- Even-tempered with a reputation for consistency and fairness
- Organized and able to meet deadlines
- Good judgment of people and situations
- Ability to manage heavy volume events and many details
- Neat, well-groomed, and highly professional
- Exceptional guest and customer service skills
Job Duties
- Review and approve recipe files and discuss improvements with culinary staff
- Use high quality food items creatively prepared, presented, and flavorful in a cost effective manner
- Review and approve food orders from the central commissary for special order items
- Frequently review finished products for quality before leaving the kitchen
- Ensure all foods, beverages, and garnishes meet culinary standards
- Oversee kitchen appearance, cleanliness, safety, and equipment maintenance
- Manage menu creation, production, and ordering for special events
- Price menu, catering, and seasonal items while adhering to food and cost control guidelines
- Develop and approve seasonal specials and pastry items
- Conduct product taste panels as required
- Participate in culinary events and competitions
- Control food costs and waste, discussing reports with key staff
- Monitor kitchen payroll in conjunction with business forecasts and budget
- Interview, hire, train, motivate, and counsel kitchen staff
- Prepare and review weekly schedules to meet forecasts and budgets
- Delegate responsibilities to develop supervisors and subordinates
- Maintain professionalism, grooming standards, and uniform compliance
- Collaborate with management team to support overall hotel goals
