Job Requirements

  • high school diploma or equivalent
  • 5+ years high-volume cooking experience in fine dining
  • 3+ years as executive chef in hotel or fine dining
  • strong interpersonal and communication skills
  • leadership experience
  • organized and able to meet deadlines
  • good judgment and focus under pressure
  • neat and professional
  • excellent guest service skills
  • ability to stand for extended periods
  • ability to perform reaching, stooping, and crouching motions
  • manual dexterity for kitchen tools
  • good visual acuity
  • good sense of smell and taste
  • closed-toe non-canvas non-skid shoes required

Job Qualifications

Job Duties

  • review and approve recipe files and discuss improvements with culinary staff
  • use high quality food items prepared creatively and cost-effectively
  • review and approve food orders from central commissary
  • frequently check finished products for quality before leaving kitchen
  • oversee kitchen cleanliness, safety, and maintenance of equipment
  • troubleshoot kitchen issues
  • ensure proper disposal of kitchen waste
  • manage creation of menus, ordering, and production for special events
  • price all menu, catering, and seasonal items according to cost control guidelines
  • develop and approve seasonal specials and pastry items
  • schedule and conduct product taste panels
  • participate in culinary events and competitions
  • control food costs by managing purchasing, storage, and waste
  • discuss daily food cost reports with key staff
  • ensure invoices are coded and prices updated weekly
  • maintain kitchen payroll within budget
  • interview, hire, and train kitchen staff
  • manage weekly schedules to meet forecasts and budgets
  • motivate culinary staff to meet food preparation standards
  • provide leadership and counsel staff
  • delegate responsibilities to develop team members
  • cooperate with management team and complete assigned projects timely
  • maintain grooming standards and wear provided uniform
